Holden Farm Dairy at Bwlchwernen Fawr has been managed organically since 1973 and is Wales’ longest-established certified organic dairy farm. Its herd of Ayrshire cows supplies the milk for Hafod cheese, made every other day using all the farm’s milk. Hafod is matured for about a year, following a slower cheddar-making recipe inspired by early twentieth-century methods.
