Caws Penhelyg makes certified organic raw-milk cheese at a small micro-dairy near Aberystwyth in Ceredigion, using single-herd milk from the Jenkins family farm. Its two cheeses are Abaty, a creamy Brie-style cheese, and Abaty Glas, a soft blue, both made by hand in small batches. The dairy works only with organic, unpasteurised cow’s milk, with the Abaty cheeses shaped around soft, creamy raw-milk styles made at the same Ceredigion micro-dairy.
