The Very Shellfish Diver supplies hand-dived scallops to restaurant kitchens, with each scallop selected by hand and harvested without nets or dredging. The business works with divers across Wales, Scotland and England, bringing scallops in from coastal waters around Britain. Hand-dived scallops are the whole product here, with the business following that one shellfish from diver harvest through to chef supply. The scallops remain closely identified with hand selection and diver-led harvesting.
