The Grumpy Baker is a bakery on Ironbridge Road in Tongwynlais, making sourdough and yeasted loaves from water, flour, salt, yeast and time. It uses local organic flour, Welsh water and Welsh sea salt, and for its sourdoughs it keeps a home-grown starter maintained in Tongwynlais. Both sourdough and yeasted breads are slowly fermented, with loaves such as White(ish) Sourdough fermented and proved for more than 18 hours.
