Norton & Yarrow makes handmade goats' cheese at Pencrug farm near Llangadog in Carmarthenshire, using milk from its own herd. The business produces two cheeses: Sinodun Hill, a pyramid-shaped lactic cheese with fresh citrus and almond character, and Brightwell Ash, a small ash-coated disc with a silky texture and hazelnut notes. Both are made on the farm using slow, careful methods with few added ingredients.
